Stir Fried Squid & Chinese Chive Flower Stalks

INGREDIENTS:

10 oz Chinese chive flower stalks
7 oz squid
¼ cup water
2 tbsp. olive oil
2 tbsp. oyster sauce
2 tsp. fish sauce
2 tsp. light soy sauce
¼ cup onion (sliced)
1/3 cup tomato (sliced into 1 inch lengths)

PREPARATION:

1. Cut the Chinese chive flower stalk stems approximately 3 inches from the bottom and discard.
2. Wash the squid and rinse in warm water until clean, then slice the squid into 3 to 4 inch lengths and score one side of each piece of squid by making slices with a sharp knife and then additional slices perpendicular to the original slices, but do not cut though the squid.
3. Heat the olive oil in the wok and when it is hot add the sliced onion and stir fry for two minutes, then add the squid and continue to stir fry with the onions for approximately 3 more minutes.
4. Add the Chinese chive flower stalks and stir fry together with the squid and the onions until soft and then add the tomatoes, water, fish sauce, light soy sauce, and oyster sauce.
5. Stir fry for a few minutes until mixed well and turn off the heat.
6. Place on a plate to serve.

Makes 3 to 4 servings 

Tip: You can use packaged squid as a substitute for fresh squid.
