Red Curry Shrimp

INGREDIENTS:

7 oz. shrimp
1 cup coconut milk
¼ cup water
¼ cup sliced onion
1 tbsp. evaporated milk
1 tbsp. red curry paste
1 tsp. sugar
1 tsp. soy sauce
1 tsp. fish sauce
3 pieces red chili peppers
4 each scallions

PREPARATION:

1. Heat coconut milk in a skillet at a low heat setting, then add the red curry paste and stir for approximately 3 minutes.
2. Add water, sliced onion and red chili peppers, stirring until mixed thoroughly.
3. Add shrimp, then season to taste with fish sauce, sugar, soy sauce, and evaporated milk, stirring well. Let simmer a few minutes.
4. Add scallions and remove from the heat.
5. Place onto a plate and garnish with coriander.

Makes 3-4 servings.
