My yard long bean salad goes great with grilled pork, chicken or fish. Sometimes I prepare it for lunch and other times I serve it with dinner. It is good at any time, especially when served with jasmine rice or sticky rice.
Ingredients:
2 cups yard long beans (cut into 1" lengths)
½ cup cherry tomatoes
2 tbsp. fish sauce
2 tbsp. lime juice
2 tbsp. tamarind juice
1 tbsp. palm sugar
3 each red chili peppers
3 each garlic cloves (peeled)
Preparation:
1. Using a mortar and pestle, crush the red chili peppers and garlic cloves together until well mixed.
2. Add the yard long beans, fish sauce, lime juice, tamarind juice, palm sugar and cherry tomatoes, crushing everything together using the mortar and pestle until mixed well.
3. Place on a serving plate and serve immediately.
