I love to eat Thai style cucumber salad for my lunch. Fresh cucumber tastes great and goes well with any other ingredients mixed with it. My friends love to eat this mouth watering recipe when they come to visit me. I grow cucumbers in my garden every summer, but fresh cucumbers bought in any grocery store will also work well with this recipe.
Ingredients:
2 cups cucumber (shredded)
½ cup green beans (cut to 1'' lengths)
3 each garlic cloves
5 each hot chili peppers
10 each cherry tomatoes (cut in half)
1 tbsp. shrimp powder
2 tbsp. tamarind juice
2 tbsp. lime juice
1 tbsp. palm sugar
2 tbsp. fish sauce
Preparation:
1. Using a mortar and pestle, pound the hot chili peppers and garlic cloves until crushed.
2. Add the green beans, cucumbers, fish sauce, tamarind juice, lime juice, palm sugar, cherry tomatoes, shrimp powder and crush gently until mixed well.
3. Transfer to a platter and serve immediately.
