Shrimp with Curry Sauce (Shushi Koong)

Deep - Fried shrimp with delicious red curry sauce.

Ingredients:

8 medium shrimp
2 tbsp. small dried shrimp
3 tbsp. red curry paste
2 tbsp. palm sugar
2 tbsp. olive oil
1 tbsp. fish sauce
1 each kaffir lime leaf (finely sliced)
½ cup coconut milk
- - vegetable oil (for deep fry)

Garnish:

5 each sweet basil leaves
2 tbsp. cabbage leaf (finely sliced)
1 piece green leaf lettuce
3 tbsp. coconut cream
1 each coriander leaf and stem (finely chopped)

Preparation:

1. Deep fry the shrimp in the vegetable oil using a medium high heat setting for 1 minute, then remove the shrimp and place on absorbent paper and set aside.
2. Using a mortar and pestle, pound the dried shrimps and set aside.
3. Heat the olive oil in a wok, then add red curry paste and stir-fry for a few minutes until an aroma develops.
4. Add coconut milk to the wok and bring it to boil.
5. Add the small dried shrimps, palm sugar and fish sauce, then stir for a few seconds.
6. Add the kaffir lime leaf and then remove from the heat.
7. Arrange the shrimp in a serving dish on a bed of green leaf lettuce.
8. Pour the red curry sauce onto the shrimp and sprinkle with the sliced cabbage and garnish with coconut cream, coriander leaf and basil leaves.

Makes 1 serving
