Stir-Fry Pork with Ginger (Pad-Moo-Sai-Khing)


I love to use oyster mushrooms when I prepare stir-fried pork with ginger. My daughter and I shared enjoyed a delicious lunch using this recipe with jasmine rice. I am certain you will, too.

INGREDIENTS:

10 oz lean pork (cut into bite sized thin slices)
1 ¼ cup oyster mushrooms
½ cup onion (slice into strips)
½ cup ginger (slice into 2 inch long strips)
¼ cup sweet chili peppers (slice into strips)
¼ cup scallions
1 tbsp. chopped garlic
1 ½ tbsp. soy bean paste
2 tbsp. thin soy sauce
2 tbsp. palm sugar
2 tbsp. oyster sauce
3 tbsp. olive oil
3 tbsp. chicken stock

PREPARATION:

1. In a medium skillet, heat 3 tbsp. of olive oil using medium high heat.
2. Add the chopped garlic and stir until fragrant, then add the soy bean paste and mix together.
3. Add the pork, oyster mushrooms and onions, stirring constantly until the pork is done.
4. Season with palm sugar, oyster sauce and thin soy sauce.
5. Add the strips of ginger and sweet chili peppers, scallions and chicken stock, stirring regularly for a few minutes and remove from the heat.
6. Serve hot with jasmine rice.
