Stir Fried Wild Rice Noodles (Pad See-Eew)


What does see-eew mean? In the Thai language, it means soy sauce. Pad See-eew is a popular food that is commonly found in restaurants in Thailand. It can also be found on food stands on the streets. This dish is usually served with chicken or sliced pork and kale (Chinese broccoli). I like to marinate the pork before I cook because it makes pork more tender and taste better.

INGREDIENTS: FOR MARINATING WITH PORK

10 oz. boneless pork (sliced)
1 tbsp. light soy sauce
1 tbsp. oyster sauce
1 tbsp. dark sweet soy sauce
1 tbsp. rice wine vinegar
1 large egg
1 tsp. coriander (powdered)

Mix the boneless pork with of all above and let stand for about 45 minutes to 1 hour.

INGREDIENTS: FOR COOKING

8 oz. wild rice noodles
2 tbsp. olive oil
1 tbsp. oyster sauce
1 tbsp. light soy sauce
2 tbsp. dark sweet soy sauce
1 tbsp. light soy sauce
2 tbsp. garlic (chopped)
2 tbsp. shallots (chopped)
1 tbsp. light brown sugar
1 tbsp. rice wine vinegar
1 large egg
1 tsp. white pepper (powdered)
2 cups kale (Chinese broccoli)

PREPARATIONS:

1. Soak the wild rice noodles in warm water for 20 minutes, then drain out the water and set aside.
2. Heat the olive oil in a wok using a high heat setting, then add the chopped shallots and chopped garlic, and stir until fragrant.
3. Add the boneless pork and stir for a few minutes, then add the noodles and stir again for a few more minutes.
4. Add the light soy sauce, light brown sugar, dark sweet soy sauce, light soy sauce, rice wine vinegar, oyster sauce, and mix them well, then push the contents to one side of the wok.
5. Break the egg into the wok, spreading out the egg until the egg is cooked. Spread the egg into the noodles and mix them well.
6. Add the kale (Chinese broccoli) and stir constantly until the kale is cooked, then turn off the heat.
7. Transfer the contents to a platter and sprinkle with white pepper powder.

Makes 3 servings.

Tip #1: Chicken and shrimp may also be used in this recipe.

Tip #2: Adding a little water to the noodles while frying can help to prevent the noodles from sticking together.
