Fried Flat Noodles with Soy Sauce (Pad see-eew)

In the Thai language, see-eew in Thai means soy sauce. It is very popular in Thailand, and a favorite of my husband and my daughter. Pad see-eew is easy to make and tastes delicious.

INGREDIENTS:

7 oz. boneless pork (thinly sliced)
12 oz. fresh flat noodles
1 tbsp. garlic (chopped)
1 tbsp. shallot (chopped)
2 tbsp. light soy sauce
2 tbsp. dark sweet soy sauce
1 tbsp. black soy sauce
1 tsp. light brown sugar
2 tbsp. olive oil
½ cup Chinese broccoli (sliced)
1 large egg

PREPARATION:

1. Cut the fresh flat rice noodles into strips 1 inch wide and 2 inches long, then slice the center of the noodles to open and spread apart.
2. Place the noodles into a bowl and add the black soy sauce to the noodles, mixing them together to darken the noodles, then set aside.
3. Heat olive oil in a wok using a medium high heat setting. Then add the garlic and shallots and stir until fragrant.
4. Add the pork and stir for a few minutes until done. Then add the noodles, stirring to break them apart into pieces and add the dark sweet soy sauce, light soy sauce, and light brown sugar. Then stir the contents together.
5. Move the contents of the wok to open a space in the middle, then break an egg into the space, and spread out the egg until cooked. Spread the egg into the noodles and mix them well.
6. Add the Chinese broccoli and stir well for a few minutes until the broccoli is cooked, then turn off the heat.
7. If desired, serve with bean sprouts, roasted ground peanuts and lime.
8. Garnish with white pepper.

Makes 3 servings

Tip: The fresh flat rice noodles are soft and thick and can be purchased at Asian grocery stores.
