Baked Mushroom with Basil

I learned this recipe from my grandmother. She liked to cook with any herb, like basil, lemongrass and ginger. In my garden, I have a lot of basil and it reminded me of my grandmother's recipe. This recipe is a favorite in Northeast Thailand and is healthy to eat. It is a simple to make, so give it a try. Hmm..........good.

INGREDIENTS:

7 oz. brown beech mushrooms (or substitute any type of mushroom)
3 each green chili peppers
1 tbsp. ginger (sliced thin)
¼ cup basil leaves
1 tbsp. lemongrass (cut into thin slices)
1 pinch salt
2 each Banana leaves for wrapping (foil can also be used)

PREPARATION:

1. Cut each banana leaf in half, and use the 2 pieces for wrapping together (one on top and one on bottom).
2. Using a mixing bowl, mix together the mushrooms, basil, green chili peppers, ginger, lemongrass, and salt.
3. Wrap the mixture in the banana leaves (using one banana leaf on top and the other on the bottom), then pin tight using a toothpick and put in oven and bake at 350° for approximately 30 minutes.
4. Remove from the oven, open the banana leaves and place the contents on a platter. Discard the banana leaves.

Makings 3 servings

Tip: the banana leaves are for wrapping only - not for eating.
