INGREDIENTS:
2 large lobster tails
2 tbsp. palm sugar
2 tbsp. fish sauce
1-2 pinch salt (to taste)
½ cup thin slice onion
2 chopped garlic
1/3 cup basil leaves
1 tbsp. vinegar
2 tbsp. lime juice
¼ cup water
2 tbsp. olive oil
Vegetables as desired
PREPARATION:
1. Bake the lobsters in the oven at 350° for approximately 40 minutes. Remove from the oven and set aside on a platter.
2. Put the olive oil into a wok and heat at a medium high heat setting. Add chopped garlic and sliced onions and fry until golden brown and fragrant. Remove the wok from the heat and set aside.
3. To make the sauce, mix together the fish sauce, palm sugar, salt, water, lime juice and vinegar in a small pot.
4. Heat the sauce and bring to a boil, then add the sliced onions and chopped garlic from the wok and the basil leaves. Cook for a few minutes, and remove from the heat.
5. Pour the sauce over the lobsters and serve with vegetables of your choice.
Makes 3 servings
Tip: If desired, tamarind juice may be used in place of lime juice and vinegar
