As my American husband loves to eat noodles, I came up with this idea for a new recipe using a different style of noodle from that which is normally used. In this recipe I use kale, picked fresh from my vegetable garden. Kale is a favorite ingredient that is used in Rad Na (a popular Thai noodle recipe). Please try it and I would welcome any comments. INGREDIENTS:
8 oz. ground pork
6 leaves Kale (cut the stem from the bottom of the leaf)
9 oz. thin yellow noodles
2 tbsp. chopped fresh green bean
1 Pinch black pepper
1 clove garlic (chopped)
2 tbsp. olive oil
1/3 cup sliced onion
2 tbsp. soy sauce
2 tbsp. corn flour
5 tbsp. oyster sauce
½ cup bean sprouts
PREPARATION:
1. Mix the ground pork with 1 tbsp. soy sauce, chopped garlic, chopped fresh green beans and black pepper for about 10 minutes.
2. Boil water, then add the kale for a few seconds, then quickly drain and rinse with cold water (to keep the color looking fresh).
3. Using a spoon, scoop some ground pork and place on a kale leave, wrapping the leaf around the ground pork. Roast in the oven at 350° Fahrenheit for appromixily 15 minutes or until well done and remove from the oven to cool.
4. Heat a wok using a medium high setting, then add the olive oil and onions, stirring until golden brown.
5. Add the noodles and ½ cup of water and stir together, mixing them well. Cook until tender then remove and place on a platter.
6. Add the bean sprout to the wok and stir for a few minutes, then remove and place on top on the noodles.
7. Go back to the pork wrapped kale leaves and cut to lengths of about 1 inch each, then place them around the noodle platter.
8. Boil 2 more cups of water, then simmer, adding soy sauce, oyster sauce, and corn flour (mixed with cold water) to make soup stock. After 2 to 3 minutes pour the soup stock onto the platter, then decorate with chopped scallions and serve hot.
Tip #1: Fresh kale leaves should be soft and pliable for best taste (not old or dry leaves)
Tip #2: Rad Na can be served with powder chilis, sugar, and fish sauce to add more taste!
